The bar at the Baccarat Hotel New York, Grand Salon, takes visual cues from American long bars of the past, the glamorous ballrooms of French hotels, and, with its barrel-vaulted natural wood ceiling, the royal stables at Versailles. A bowl of prime cashews and house-marinated European olives is a standout accompaniment to our drinks, but for something larger, a bar menu has been created by executive chef Ashfer Biju in partnership with culinary director and two-Michelin-starred chef Gabriel Kreuther. Meanwhile, Baccarat’s limited-edition cocktails are always impressive, and for the winter season, wine director Saiff Hammad pays homage to New York’s most vibrant and celebrated neighborhoods. One of his favorite creations, SoHo, inspired by Lafayette Street, is accompanied by an elaborate cheese board incorporating savory and sweet elements. It is made with vodka, Massenez, Roquefort liqueur, Iwa 5 sake and sweet wine, and garnished by an apricot and blue-cheese olive.
