Piegari Ristorante: The New Must-Try Italian Spot for Pasta Lovers in Miami

An Argentine favorite brings high-end Italian fare to Miami’s Wynwood district

I was surprised that a high-end Italian restaurant had quietly opened in Miami’s bohemian Wynwood, a signal that the area is evolving and might be redefining itself. A visit to Piegari brings instant gratification with a carpaccio di pesce, paper-thin salmon, frisée and fresh orange segments, and a burrata with prosciutto di Parma and arugula.

We also enjoyed a warm fritto misto, delicately fried calamari, shrimp and zucchini accompanied by a pomodoro dip, and polpettine della nonna, which combines pork, cow and veal served with fresh ricotta.

Salads might appear as something one can have anywhere, but the Pacifico with smoked salmon, arugula, egg, cherry tomatoes and Parmigiano cheese, dressed with lemon oil, is perfect before digging into the pasta course. And here is where one has a hard time making decisions: The unique fettuccine al nero di seppia features squid-ink fettucine and sweet baby shrimp tossed in a creamy lemon garlic sauce with red caviar.

The rich and hard-to-stop-eating tortellini verdi alla valdostana is stuffed with Gruyère cheese and served in a creamy béchamel sauce. And the pappardelle al funghi combines the wonderful bite of freshly made pappardelle, perfectly cooked al dente, with a wild mushroom and garlic sauce with fresh black truffles. If unsure, the Piegari Pasta Tasting offers the fettuccine al nero, corde di chitarra (guitar string pasta with fresh tomatoes and black olives) and spinach ravioli with pink sauce.

At this point we were full, and we never sampled the dried pasta section of the menu. I would have loved to have tried the linguine frutti di mare (with assorted seafood), the spaghetti alle vongole (spicy clam sauce), cacio e pepe (rigatoni with black pepper and pecorino Romano) and paccheri all’aragosta (Maine lobster with paccheri pasta and lobster bisque sauce).

There are also plenty of risottos and appealing entrées, such as pollo alla tutti—organic chicken with red peppers, cherry tomatoes, black olives and portobellos in a demi-glace sauce—and the crispy veal Milanese, simply dressed with arugula and tomato.

Fish lovers, don’t fret: Chilean sea bass encrusted with pistachio is enrobed in a white wine lemon sauce, while red snapper alla livornese comes in a sumptuous fresh tomato-white wine-taggiasca olive sauce enhanced with briny capers. Gelato del giorno, a giant serving for the table, could be the best dessert, but there are also cannolis, profiteroles, meringata with strawberries, and even a homemade flan with cream and dulce de leche, so don’t think I am keeping secrets from you!
