What to Order at Mirazur on the French Riviera

A floral-themed menu shines at this three-Michelin-star restaurant

The first non-French chef to earn three Michelin stars in France, Mirazur’s Mauro Colagreco studies the influence of the moon and planets on his gardens, where he grows up to 80 percent of the vegetables and fruits he uses in his kitchen. During my recent visit, his menu was based on Flowers, and my partner and I weren’t sure what was in store for us. But this biodynamic menu was about to present an unforgettable experience.

After a parade of delightful canapés, the bread arrived along with a poem by Chilean writer Pablo Neruda, who paid tribute to the staple’s miraculous simplicity. The first substantial dish to arrive, a catch of the day, featured waves of yellow, pink and purple flower petals meticulously arranged in lines and concealing a red snapper underneath. Then came edible yucca gloriosa flower petals atop freshly steamed crab meat, with caviar in the bloom’s center. Saffron and apricots combined in the next course, followed by a foamy Osmanthus sea stew, with the fragrant flower introducing a peachy aroma to the beautifully emulsified sauce bathing sweet mussels (our pleasure was so apparent that our waiter brought us a second helping). A zucchini flower disguising a delicious squid stew prepared us for the extravagant vanilla lobster, a brochette of lobster medallions and celeriac pierced by a single vanilla bean, the same one used to extract the pods for the silky butter sauce. For our meat course we had fig pigeon and fig guinea fowl, which satisfied our palates though we were already full. A sublime rose yuzu pre-dessert was followed by a sensational jasmine pear sorbet, which complemented the most amazing hazelnut burnt butter cake we ever laid teeth on.

Verdict

It only takes one visit to get hooked on Mirazur. The always changing experience has earned Mauro Colagreco accolades and a coveted place on The World’s 50 Best Restaurants Best of the Best list. Many fans like me try to go at least once a year.
